Traditional Recipe for Shepherd’s Pie


 Ingredients
  • 25 ml. cooking oil
  • 2 medium sized onions, peeled and finely chopped
  • 2 celery stalks, chopped
  • 2 medium sized carrots, scraped and finely chopped
  • 900 g minced beef
  • 125 ml warm beef stock
  • 25 ml tomato sauce
  • 10 ml Worcestershire sauce
  • Salt and pepper to taste
  • 2 ml dried basil
  • 25 ml fresh parsley, finely chopped
For the topping:
  • 750 g potatoes, peeled and quartered
  • 125 ml warm milk
  • Salt, pepper, and nutmeg to taste
  • 2 teaspoons margarine
Preparation

1. Heat oil in saucepan and fry onions until tender. Add the celery and carrots and stir-fry for another five minutes.
2. Add meat and brown. Add the beef stock and bring to the boil.
3. Reduce heat and add the tomato sauce, Worcestershire sauce, salt, pepper, basil, and parsley. Cover and allow simmering for about 30 minutes.
4. In the meantime, cook the potatoes until tender and drain thoroughly. Put in bowl and mash it, add the salt, pepper and nutmeg. Beat in 1 tablespoon margarine.
5. Pour meat mixture into greased oven dish and cover it with the mashed potatoes.
6. Dot the topping with the remaining margarine.
7. Bake at 190 C (375 F) for about 15 minutes. Then grill for about 10 minutes to brown the topping.

Chicken Salad



Take 300 g leftover cold chicken and cut into bite-sized pieces, add 1 carrot thinly sliced, 5 - 10 pineapple pieces, 38 ml (3 tbsp.) white wine vinegar, 2 ml (½ tsp.) salt, 2 cloves garlic, a pinch of ground nutmeg and a pinch of pepper. Marinade overnight in white wine vinegar, drain, remove garlic and toss with 1 cup mayonnaise and 25 ml (2 tbsp.) olive oil. Arrange on salad leaves. Serves 2.

Easy Recipes

Try these three easy recipes!


Glazed Baby Carrots

Place 2 cups frozen baby carrots in a small bowl. Sprinkle well with 2 tbsp. brown sugar and salt and pepper. Cook in microwave on high for 8 minutes, covered.

Minty Peas

Place 2 Cups frozen peas in a small bowl. Sprinkle with 1 tsp. Robertson’s dried mint, 2 tsp. brown sugar, and salt and pepper to taste. Cover and microwave on high for 4 minutes. 

Baked Bananas

Peel 4 bananas and slice in half lengthwise. Lay in a small casserole dish. Sprinkle with 2 tbsp. brown sugar, 2 tsp. cinnamon and the juice of one lemon. Place under the grill for 3-5 minutes, or until the sugar has melted and the bananas are heated through. Serve with plain fat-free yoghurt.

Curry Lamb Potjie Recipe


Let me kick off this fantastic new blog with a traditional dish, potjiekos!



Ingredients
  • 30 ml cooking oil
  • salt and pepper to taste
  • 1.5 kg lamb stew, cut into pieces
  • 3 medium onions, chopped
  • 250 ml water
  • 500 g whole baby carrots, peeled
  • 500 g potatoes, peeled and cut into halves
  • 500 g patty pans, whole
  • 10 dried cling peaches
  • 20 ml brown sugar
  • 10 ml mild curry powder
  • 5 ml turmeric
  • 125 ml milk
Preparation

1. Heat the oil in the pot. Season the meat with salt and pepper and brown a few pieces at a time. Remove and set aside. Fry the onions until tender. Return the meat to the pot. Cover the meat with water, replace lid and simmer for 1 hour.
2. Add the peaches, carrots and potatoes and simmer for approximately 30 minutes. Add patty pans and simmer for another 15 minutes
3. Mix the sugar, curry powder and turmeric with the milk and add. Simmer for another 15 minutes and gently stir through once. Add more water if the potjie becomes too dry and simmer for another 15 minutes.

Enjoy with rice.
