Easy Recipes

Try these three easy recipes!


Glazed Baby Carrots

Place 2 cups frozen baby carrots in a small bowl. Sprinkle well with 2 tbsp. brown sugar and salt and pepper. Cook in microwave on high for 8 minutes, covered.

Minty Peas

Place 2 Cups frozen peas in a small bowl. Sprinkle with 1 tsp. Robertson’s dried mint, 2 tsp. brown sugar, and salt and pepper to taste. Cover and microwave on high for 4 minutes. 

Baked Bananas

Peel 4 bananas and slice in half lengthwise. Lay in a small casserole dish. Sprinkle with 2 tbsp. brown sugar, 2 tsp. cinnamon and the juice of one lemon. Place under the grill for 3-5 minutes, or until the sugar has melted and the bananas are heated through. Serve with plain fat-free yoghurt.

Recipe for Onion Jam



Ingredients

  • 1 tsp. butter
  • 2 onions, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/2 cup balsamic vinegar
  • 1/4 cup dark brown sugar
  • sea salt and fresh cracked pepper
Preparation

Melt butter in a saute pan over medium heat. Add the onion slices and cook, stirring occasionally, until they soften and begin to caramelize – about 10 minutes. Add vinegars and brown sugar, salt, and pepper. Reduce heat to low and simmer until vinegars reduce and mixture has a thick, jam-like consistency – about 15 minutes. Taste, and adjust seasonings if needed.
