Potatoes were first cultivated by South American Indians of
the Andes, and taken to England in 1586 by Sir Francis Drake. From there their
cultivation spread to Ireland, continental Europe and finally, in 1719, to the
American colonies.
Potatoes are the most economical plate of food which you can
serve and each dish is loaded with energy, especially when such a dish is
combined with other delicious and nutritious vegetables and fruit.
The advantage of this recipe is that you can add ingredients
to your liking - green pepper, cauliflower instead of cabbage, strawberries,
gherkins, etc. Let your imagination run wild. You can also add more condiments
to taste.
Ingredients
- 4 big potatoes, peeled, diced and cooked
- 1 small cabbage, shredded
- 2 big carrots cut julienne style
- 1 small cucumber cut into thin slices
- ½ cup yellow corn kernels
- 2 cups black grapes
Ingredients for Dressing
- 1 cup mayonnaise
- 1 cup natural yoghurt
- 2 tablespoons finely chopped onion
- Salt to taste
- Ground black pepper to taste
- Mix all the vegetables and grapes together in a salad bowl.
- Mix all the ingredients for the dressing and pour over the salad.
- Chill until needed
